Firm Recipe for Shaped Designs


Basic Yellow Cake Recipe
This is an excellent recipe for any birthday, or celebration, cake. The basic vanilla flavored recipe is delicious and light. The recipe is easy to adapt, with delicious variations such as banana, simple to incorporate.

This birthday cake recipe makes one 8inch layer, round or square cake. For a 9 inch cake, make 1 ½ times the mixture:

  • 4 oz (125g) butter
  • 6 oz (185g) sugar
  • 2 eggs (beaten)
  • 6 oz (185g) flour
  • 1 ½ teaspoons baking powder
  • 4 fl oz (125ml) milk (125ml)
  • 1 teaspoon vanilla essence
Method
  1. Put the sugar and butter in a mixing bowl and beat until light and fluffy
  2. Beat in the vanilla essence
  3. Add the eggs, a little at a time. Beat until light and fluffy
  4. Fold in the half the flour and baking powder
  5. Fold in half the milk
  6. Fold in the rest of the flour, followed by the last of the milk
  7. Place into the greased and floured baking pans

  8. Bake at 350C (180F) for about 20 minutes for the layer cake, or 45 minutes for a square or round cake. The cake is ready when it is golden brown, and springs back when pressed lightly in the middle.
Increase the cooking times by about 5 to 10 minutes for a 9 inch cake.

Variations
The basic yellow cake recipe above can be adapted to produce tasty alternatives:

Marble cake
Make the basic yellow birthday cake recipe, then divide into two. Add 1 ½ tablespoons of cocoa to one half of the mixture, plus 2 extra teaspoons of milk. Spoon the plain mixture into the baking tins. Spoon the chocolate mixture on top, and swirl through. Bake as above in greased and floured baking pans.

Banana cake
For this you need the basic yellow birthday cake recipe ingredients, but leave out the milk. In addition, you need 2 large, ripe bananas and 1 teaspoon of bicarbonate of soda.
To make this variation:

  1. Mash 2 large ripe bananas
  2. Beat the sugar and butter together until light and fluffy, then add the mashed banana
  3. Add 1 teaspoon of bicarbonate of soda to the baking powder and flour, and fold into the cake mixture
  4. Put into the greased and floured baking pans and bake for about 20 minutes at 350F (180C).

Firm Cake Recipe for Shaped Designs
This birthday cake recipe makes one 10 inch square cake

  • 18 oz (560g) flour
  • 3 teaspoons baking powder
  • 6 eggs
  • 12 oz (375g) butter or margarine
  • 12 oz (375g) sugar
  • 1 teaspoon vanilla essence

As this is a large cake, grease the baking pan with shortening, then line with non stick baking parchment.

Method
  1. Put the butter or margarine in a large mixing bowl, and beat in the sugar until light and fluffy
  2. Add the eggs, one at a time, beating well. After each egg, beat in a spoonful of flour to prevent the mixture form curdling. Add the vanilla essence
  3. Fold in the flour and the baking powder using a large spoon
  4. Put the mixture into the prepared baking pan and bake at 325F (170C) for 1 to 1 hour 15 minutes
  5. To test if the cake is done, push a thin skewer into the center of the cake- if it comes out clean the cake is ready
  6. Take out of the oven and let the cake cool in the pan for 5 minutes before turning onto a wire rack to cool
